Two classic flavour combinations...chocolate and raspberries.
Warm, gooey, oozy, fudgy and COMPLETELY indulgent!
I literally have no words for them, except that you must try them. I ended up making a second batch as they were just so good. I served them warm for dessert with a generous dollop of double cream.
You need to make a batch this weekend.My biggest tip is, as with all brwnie recipes, don't overcook them. When you think they need 5 more minutes, take them out of the oven.
Makes 16 squares or 10 very generous chunky pieces.
200g plain chocolate (70% cocoa solids) chopped into small pieces
125g unsalted softened butter
275g brown sugar
1 tsp vanilla extract
2 large eggs, lightly beaten
100g plain flour
2 tbsp cocoa powder
1/2 cup fresh/frozen raspberries
1. Preheat the oven to 180°C (160C fan forced).
2.Grease and baseline a 20cm square cake tin with baking paper. I must say though, I like my brownies higher, so I used a smaller, high sided tin.
3. Put half the chocolate into a heatproof bowl, set over a pan of gently simmering water and allow to melt slowly. Remove the bowl from the heat and allow to cool while making the mixture.
4. Put the butter in a large mixing bowl and, using an electric mixer, beat until soft and creamy. Add the sugar and vanilla extract, and continue beating until the mixture is soft and fluffy.
5. Gradually beat in the eggs then sift over the flour and cocoa.
6. Spoon over the melted chocolate and stir everything together thoroughly. Stir in the rest of the chopped chocolate pieces and the raspberries.
7. Pour the mixture into the prepared tin
8. Bake in the preheated oven for 25-30 minutes until firm to the touch but still soft and gooey in the centre.
TIP: The brownies will continue to cook as they cool. Leave to cool in the tin and then remove from the tin using the paper to lift them out and cut into squares.
Eat warm or at room temperature.
And, they are definitely better the next day too...if they last that long!
